About French Broad Chocolate
Dan and Jael Rattigan started their dreams in the world of chocolate in Costa Rica in 2003 from a Puerto Viejo de Limon Fishing Port where, from their home, they opened a cafeteria and dessert shop called Bread & Chocolate, here they offered their first chocolates becoming the center of his life his passion for chocolate. Eventually, Bread & Chocolate was sold to one of its chefs, Tom Franklin, and they continued their journey to Asheville in 2008.
The chocolate business continued from his home in Asheville until demand was greater than supply, which is why French Broad Chocolate Lounge was born in 2008. Their dream of building a chocolate factory came true in 2012 when the French Broad Chocolate Factory & Tasting Room opened to the public; they became manufacturers of bean-to-bar chocolates using cocoa beans from different local farmers to finally offer their fine chocolates with mixed flavors and strictly selected ingredients.
Success has accompanied its founders achieving great sales for which in 2018 the factory had to be moved to Ramp Studios in Asheville due to lack of production capacity. In this new
Processing
The process of making 100% cacao, French broad chocolate extends from the cleaning of the cocoa beans to the molding of the chocolate bar. The first stage of this process is processing of the organic cocoa beans. First, the beans are cleaned via vibrations that remove dust and debris to ensure pure, raw cocoa. Next, the cleaned beans are roasted to development and enhance unique flavors before being winnowed to create cocoa nibs. The second stage includes milling of the cocoa nibs. These nibs are sent through a mill to reduce their size and express excess fat from the cocoa particles, known as cocoa butter. After milling, these particles are then ground to a fine powder. This is also where essential ingredients like sugar, milk powder, and additional cocoa butter are added in. The third stage is about refining the chocolate product. First, the mixture is moved into the conche process, where texture and workability is improved. Next, the now liquid chocolate mixture is sieved to remove any particles that are too large before being pressed. In the final stage, the French broad chocolate is tempered, molded, and cooled into 60g bars.

French broad chocolate is made from the highest quality cocoa and natural flavors. Made from 100% organic cocoa and butter, this chocolate is also suitable for several diet types, including Paleo. However, due to the possibility of trace ingredients contents, like milk, peanuts, eggs, corn, and wheat, whose who follow a vegan diet or suffer from gluten or nut allergies should carefully read through the ingredient label before consuming. French broad chocolate is also free of added sugars. One 60g French broad chocolate bar contains two 30g servings. Each serving is low in calories, at 190 per serving. It is also high in fiber, containing 5g per serving, and 4g protein per serving as well as 9g of carbs per serving.
